Paleo Baked Beans Slow Cooker

Are you guys as excited as we are about St. Patrick's day?
I couldn't tell you why, but this has to be one of my favorite of the 'minor' holidays (aka, not Thanksgiving, Christmas, New Year's, Easter, etc). It might have to do with the fact that it is an excuse to make incredibly tasty food and enjoy the Irish spirit of having a good time.
I think it also comes at the perfect time. The middle of March is just about the time that we're really in need of a holiday to get us through the last of the winter weather and slush.
Our Slow Cooker Guinness Baked Beans Recipe
Now, before you go getting any ideas, these are not your classic sweet and sticky barbecue baked beans.
Cooking the beans in Guinness gives them a caramelized, malty, depth of flavor. The sweetness is slight, but the flavor is rich and robust, more on the savory side of the spectrum.
If you love the flavors of Guinness, you'll love serving these beans as a side to your Reuben or Irish Egg Rolls!
Slow Cooker Guinness Baked Beans

Servings: 6 people
- 1 ½ c white beans, dry (navy or great northern), soaked overnight
- ½ onion, diced
- 1 garlic clove, crushed
- 2 Tbsp brown sugar
- 12 oz Guinness (or other stout beer)
- 2 Tbsp molasses
- 2 tsp Worcestershire sauce
- ¼ tsp salt
- 1/8 tsp ground black pepper

Place the soaked white beans in a large saucepan and cover with 1 inch of water. Bring the beans to a boil and simmer until just tender, 15-20 minutes.

While the beans are cooking, place the remaining ingredients into the slow cooker.

When the beans are just tender, drain them and put them into the slow cooker.

Cook on low for 6 - 8 hours. These can also be cooked on high for 3-4 hours with the lid of the crock pot partially cocked to let the steam out.

Stir occasionally if you're around.
